The Tsunehisa Washiji Gyuto 21 cm Oak SLD is a versatile Japanese chef’s knife that combines a classic Gyuto profile with modern steel and traditional aesthetics. Designed for everyday kitchen work, it performs equally well when slicing meat, preparing fish, or chopping vegetables.

The blade features a SLD steel core, hardened to approximately 61–62 HRC, offering excellent edge retention and a refined cutting feel. Stainless steel cladding improves corrosion resistance and simplifies maintenance. The blade is finished in a Nashiji (Washiji) texture, reminiscent of pear skin, giving the knife a natural, handcrafted appearance while supporting practical food release.

A balanced blade geometry and double-bevel (50/50) grind ensure smooth, controlled cutting and reliable performance. The knife is completed with an octagonal burnt oak handle, which provides a secure grip and comfortable balance. The charred oak finish highlights the wood grain and adds durability and character.
