






The Tsunehisa Washiji Bunka 17 cm Oak SLD is a compact Japanese kitchen knife that combines the versatility of the Bunka profile with modern steel and traditional craftsmanship. Its distinctive K-tip offers excellent control for precise cuts, while the wide blade performs well for vegetable prep, slicing, and portioning proteins.
The blade features a SLD steel core, hardened to approximately 61–62 HRC, delivering stable edge retention and a refined cutting feel. Stainless steel cladding improves corrosion resistance and ease of maintenance. The Nashiji (Washiji) finish, inspired by pear skin texture, gives the blade a natural, handcrafted appearance and supports practical food release.
