The Yoshida Damascus ZDP-189 Gyuto 210 mm is a Japanese chef's knife designed for versatile preparation of meat, fish and vegetables. The Gyuto profile offers an excellent balance of cutting length, precision and agility, making it suitable for slicing, chopping and portioning in both home and professional kitchens.
The blade features a ZDP-189 stainless steel core, one of the most advanced steels available for premium kitchen knives. Hardened to 67 HRC, it provides exceptional wear resistance and remarkably long edge retention. The stainless steel core and stainless steel cladding make the knife easy to maintain and highly resistant to corrosion during everyday use. Due to its extreme hardness, sharpening is best performed with high quality whetstones designed for high hardness steels.
The blade is finished with an elegant Damascus pattern that highlights the craftsmanship behind the knife while creating a distinctive layered appearance. Its thin blade geometry and double bevel edge deliver smooth cutting performance and excellent control for both precision work and efficient food preparation.
The traditional octagonal rosewood handle is fitted with a durable pakka wood ferrule. It offers a secure and comfortable grip, while the lightweight 138 g construction provides excellent balance and effortless handling throughout extended kitchen sessions.
