    The Kyohei Kurouchi Santoku 170 mm Keyaki Aogami is a traditional Japanese all purpose kitchen knife designed for everyday preparation of vegetables, meat and fish. The Santoku profile combines a wide blade with excellent control, making it suitable for slicing, chopping and general kitchen work. The knife is handcrafted in Japan's Tosa region, well known for its long blacksmithing tradition.

    The blade features an Aogami #2 carbon steel core, valued for its excellent cutting performance, strong edge retention and ease of sharpening. Hardened to approximately 62 +/- 1 HRC, it supports a thin and precise cutting edge suitable for demanding kitchen tasks. The iron cladding gives the knife a traditional appearance and authentic forged character. As a carbon steel knife with iron cladding, it requires proper care. The blade should always be thoroughly washed and completely dried after use to minimize the risk of corrosion.

    The blade is finished with a traditional Kurouchi surface, leaving the characteristic dark forged finish that highlights its handcrafted appearance. The double bevel edge provides smooth cutting performance and makes the knife suitable for both right and left handed users while allowing straightforward maintenance.

    The Keyaki wood handle is fitted with a synthetic ferrule. Its lightweight construction provides a secure grip and balanced handling. Weighing only 131 g, the knife feels agile and comfortable during extended food preparation.
