The Masutani Nashiji Santoku 170 mm VG-1 Brown is a versatile Japanese Santoku knife designed for everyday preparation of vegetables, meat and fish. Its well balanced Santoku profile is ideal for slicing, chopping and portioning, while the 168 mm blade provides excellent control and agility for daily kitchen tasks.
The blade features a VG-1 stainless steel core that offers a balanced combination of corrosion resistance, dependable edge retention and straightforward maintenance. Hardened to approximately 61 +/- 1 HRC, it supports a thin cutting geometry for clean, precise cuts with reliable edge stability. The stainless steel core and stainless cladding make the knife easy to care for and well suited to regular kitchen use.
The traditional Nashiji finish gives the blade a distinctive pear skin texture that reflects classic Japanese craftsmanship. The lightly textured surface also helps reduce food sticking during cutting. Combined with the refined blade geometry and double bevel edge, it delivers smooth cutting performance and excellent precision.
The pakka wood handle offers good moisture resistance and long lasting performance. Its ergonomic shape provides a secure grip, while the lightweight 136 g construction ensures comfortable handling throughout extended food preparation.
