The Anryu Petty 150 mm Kurouchi Tsuchime Aogami Super Octagon is a Japanese utility knife designed for precision kitchen tasks. Its compact blade excels at peeling, trimming, slicing small vegetables and fruit, preparing herbs, and handling detailed meat and fish work. The slim profile and lightweight construction provide outstanding control, making it an ideal companion to a larger Gyuto or Santoku.
The blade features an Aogami Super carbon steel core, one of Japan's most highly regarded carbon steels for its exceptional edge retention and excellent cutting performance. Hardened to approximately 63 +/- 1 HRC, it supports a thin edge geometry that delivers precise, effortless cuts while maintaining long lasting sharpness. The carbon steel core is clad with stainless steel, making everyday maintenance easier. As the core remains reactive, the knife should always be washed and dried thoroughly after use.
The blade combines a traditional Kurouchi finish with a Tsuchime hammered texture. The dark forged finish reflects the handcrafted nature of the knife, while the hammered surface adds both visual character and a refined traditional appearance. A double bevel edge and thin blade geometry provide smooth cutting performance and excellent control during delicate kitchen work.
The octagonal rosewood handle with a pakka wood ferrule offers a secure and comfortable grip. Weighing only 87 g, the knife feels exceptionally agile and balanced, allowing precise movements and reducing fatigue during extended food preparation.
