The Tsunehisa Nawame Gyuto 210 mm Damascus A10 is a Japanese chef's knife designed for a wide range of kitchen tasks, including cutting meat, fish, vegetables and everyday food preparation. The Gyuto profile combines the versatility of a classic chef knife with Japanese blade geometry, offering excellent control, precision and comfortable handling.
The blade features an AUS-10 stainless steel core, providing a balanced combination of sharpness, corrosion resistance and ease of maintenance. Hardened to approximately 60–61 HRC, the steel offers reliable edge retention while maintaining good durability for everyday kitchen use. The stainless steel core and stainless cladding make the knife easy to care for and suitable for intensive cooking environments.
The blade is finished with a combination of Tsuchime hammered texture and Damascus pattern. The hammered surface helps reduce food sticking during cutting, while the layered finish gives the blade its distinctive appearance. The thin geometry, moderate blade thickness and double bevel edge provide smooth cutting performance and precise control.
The octagonal burnt oak handle offers a secure grip and a natural Japanese aesthetic. Its ergonomic shape supports different cutting techniques, while the 145 g weight provides a balanced combination of agility and stability.
