The Petty profile excels at peeling, trimming, slicing fruit and vegetables, preparing herbs and handling detailed meat and fish preparation. Its slim 148 mm blade offers outstanding control, making it an excellent choice whenever precision is essential.
The blade features a ZDP-189 stainless steel core, one of the most advanced steels used in premium Japanese kitchen knives. Hardened to 67 HRC, it delivers exceptional wear resistance and remarkably long edge retention. The stainless steel core and stainless cladding make the knife easy to maintain and well suited for demanding everyday use. Due to its extremely high hardness, sharpening is best performed using quality whetstones designed for high hardness steels.
