





The Yoshimi Kato Bunka 170 mm Damascus VG-10 Rosewood is a versatile Japanese Bunka knife designed for precise preparation of vegetables, meat and fish. Its distinctive pointed profile provides excellent control for detailed cutting tasks, while the compact 171 mm blade length makes it highly practical for everyday kitchen use with small and medium ingredients.
The blade features a VG-10 stainless steel core, one of the most widely used Japanese stainless steels for high quality kitchen knives. It offers good corrosion resistance, easy maintenance and reliable edge retention. Hardened to approximately 61 +/- 1 HRC, the blade supports a refined cutting geometry while maintaining good durability during daily use. Stainless steel cladding further improves corrosion resistance and simplifies maintenance.
The blade is constructed with a 63-layer Damascus structure and finished with a dark Damascus surface. This layered construction creates a distinctive appearance while highlighting traditional Japanese craftsmanship.
