Kouki Kurouchi Santoku 16.5 cm Aogami #2 is a versatile Japanese kitchen knife designed for everyday work with vegetables, meat, and fish. The Santoku profile offers good control during slicing, chopping, and portioning, making it a practical main knife for both home and professional kitchens.

The blade features an Aogami #2 carbon steel core, a respected Japanese steel known for excellent sharpness, easy sharpening, and strong edge retention. With a hardness of 62-63 HRC, the knife can take a keen and aggressive cutting edge suitable for precise food preparation. As this is a reactive carbon steel, the blade should be washed and dried carefully after use.

The blade has a traditional Kurouchi finish, a dark, rustic surface left from the forging process. It gives the knife a distinctive handmade appearance and emphasizes its Japanese character. The carbon steel cladding reinforces the traditional construction, but like the core, it requires proper care.

The cherry wood handle pairs naturally with the dark blade finish and gives the knife a warm, traditional look. The light ferrule adds contrast and balances the rustic character of the blade with a clean handle design.
