Hinokuni knives are made in Kumamoto, Japan, by Yukihiro Sakai, a young blacksmith who began working independently after years of training under Daisuke Nishida. His work follows a traditional approach to Japanese forging, with a strong focus on carbon steel, simple construction, and honest cutting performance.

The defining feature of Hinokuni knives is the use of Shirogami #1, also known as White Paper Steel #1. This highly pure carbon steel is valued for its ability to take an extremely fine and aggressive edge while remaining relatively easy to sharpen. It is a reactive steel, so the blade should be washed and dried carefully after use, especially after contact with moisture or acidic ingredients.

Many Hinokuni knives feature a traditional Kurouchi finish, giving the blade a dark, rustic surface left from the forging process. Combined with iron or carbon steel cladding and clean, even grinding, these knives offer a direct cutting feel and a distinctly handmade character. The finish is simple, technical, and focused on performance rather than decoration.
