The Masutani Nashiji Gyuto 180 mm VG-1 Brown is a Japanese chef's knife designed for versatile preparation of meat, fish and vegetables. The Gyuto profile combines the functionality of a Western chef's knife with Japanese blade geometry, providing precise slicing, chopping and portioning performance. Its compact 180 mm length makes it comfortable for users who prefer a lighter and more agile kitchen knife.
The blade features a VG-1 stainless steel core valued for its balance of sharpness, edge durability and ease of maintenance. Hardened to approximately 61 +/- 1 HRC, it supports a thin cutting geometry that delivers precise cuts while maintaining reliable strength during everyday use. The stainless steel core and stainless cladding make the knife easy to care for and suitable for intensive kitchen work.
The blade is finished in the traditional Nashiji style, featuring a pear skin texture that gives the knife a distinctive handcrafted appearance. The refined geometry, double bevel edge and slim blade profile provide smooth cutting performance and excellent control when working with a wide variety of ingredients.
The pakka wood handle offers durability, resistance to everyday kitchen conditions and a secure grip. Combined with the lightweight 147 g construction, it creates a comfortable and well balanced knife suitable for extended food preparation.
