The Masutani Tsuchime Nakiri 160 mm Octagon VG-1 is a Japanese Nakiri knife designed primarily for vegetable preparation. Its wide, straight blade is ideal for precise vertical cuts, chopping and processing larger amounts of vegetables. The Nakiri profile provides a large cutting surface and excellent control during everyday kitchen work.
The blade features a VG-1 stainless steel core offering good corrosion resistance, easy maintenance and reliable cutting performance. Hardened to approximately 61 +/- 1 HRC, the blade maintains a refined edge geometry while providing practical durability for regular use. Stainless steel cladding further improves moisture resistance and simplifies maintenance.
The blade is finished with a Tsuchime hammered surface, a traditional Japanese finish created through forging. The textured surface gives the blade a distinctive appearance and helps reduce food sticking during cutting. The thin 1.7 mm blade geometry and double bevel edge provide smooth and clean vegetable cuts.
The octagonal pakka wood handle offers a comfortable and secure grip. This traditional Japanese handle shape supports precise movements and comfortable work during longer preparation sessions. With a weight of 148 g, the knife provides a balanced combination of agility and control.
