The Nakiri 17 cm is a traditional Japanese vegetable knife, characterized by a straight, wide blade that allows for quick and accurate chopping and cutting. Thanks to its geometry, it ensures full contact with the cutting board, eliminating the need to “rock” the knife.
High-grade VG-10 steel, hardness of 61+/-1 HRC, and a hammered Tsuchime finish make the knife extremely sharp, rust-resistant, and easy to maintain. The smooth surface reduces food sticking, and double bevel ensures comfortable use.
The ergonomic, octagonal-shaped handle, made of smoked oak, provides comfort and control. Thanks to its excellent balance, the knife is ideal for intensive work when cutting vegetables.
