Yoshimi Kato Knives
Yoshimi Kato is a well-known blacksmith from Echizen in Fukui Prefecture. He is the third generation of Kato masters. He worked with his father, Hiroshi Kato, for many years before taking over the family brand, Kato Uchihamono. Today, he is known as a specialist in the heat treatment of high-grade steels, such as Aogami Super and SG2/R2.
Yoshimi Kato knives are known for being very precise, sharp, and beautiful. The blades' traditional Japanese character is emphasized by their distinctive finishes, such as hand-forged Damascus and Tsuchime texture.
Kato is also responsible for the production of the highly regarded Masakage series, including Kiri, Yuki, and Koishi, and his own collections, such as SG2 Black Damascus, are among the most prized by Japanese knife enthusiasts.
