Katsushige Anryu Knives
Katsushige Anryu is a master blacksmith. He has spent over 50 years perfecting his craft. He has created some of the most highly regarded Japanese kitchen knives. His knives combine traditional forging techniques with a modern approach to ergonomics and balance. This ensures that the knives are exceptionally sharp, durable, and cutting precise. Anryu-san was one of the people who started Takefu Knife Village. He helped make this place famous and taught his skills to the people who would continue working there in the future.
Each knife with the Anryu name is the result of many years of experience and perfect craftsmanship. The highest quality steels, such as Aogami (Blue Steel) and Shirogami (White Steel), are used in production, guaranteeing unmatched sharpness and long-lasting cutting edge retention. The traditional hammered finish (tsuchime) not only makes the knives look unique, but it also makes it so that ingredients don't stick to the blade, making it more comfortable to use.
The handles of Anryu knives are made of rosewood, magnolia, or walnut. This makes them easy to hold and looks nice. Their ergonomic shape makes working in the kitchen comfortable for both professional chefs and home cooking enthusiasts.
Although Anryu-san has retired, his long-time apprentice and nephew, Takumi Ikeda, continues the master's tradition. This ensures that Anryu knives continue to set the standards for quality and precision in the world of Japanese knife making.
