Zakuri Knives
Zakuri is a brand of knives that are made by young craftsmen from the Tosa region. Their products combine traditional Japanese blacksmithing techniques with a simple and functional look.
Zakuri knives are made mostly of Aogami #1 carbon steel, which is known for being sharp, easy to sharpen, and for keeping its edge well. The blades are hardened to 62–64 HRC and are often finished in the kurouchi style, which gives them a raw, traditional look and protects the steel surface.
The handles, in the classic Japanese D-shape, are made of chestnut wood, making the knives comfortable and easy to hold. This makes Zakuri knives useful, cheap, and popular with people who like Japanese craftsmanship.
Because of the carbon steel, they need to be taken care of. This means you have to clean them thoroughly and dry them after each use. But they will give you great cutting power and a beautiful, natural look that makes each one different.
