Q: What is the difference between carbon steel and stainless steel knives?

Carbon steel knives are easier to sharpen, hold an edge longer, but require more maintenance to prevent rust. Stainless steel knives are more resistant to corrosion and easier to maintain, but may not achieve the same sharpness as carbon steel.

Where do you ship and what is the cost?

How do I care for my Japanese knife?

Hand wash immediately after use and dry thoroughly.
Never put in the dishwasher.
