    The Sujihiki Knife from the Toshihiro Wakui Shirogami #2 Collection reinterprets the classic Japanese Yanagiba knife, adapting it to Western preferences. With a blade length of 240 mm, this tool is both long and slender, making it the perfect choice for cutting thin slices, filleting fish, or meat.

    Toshihiro Wakui, formerly part of the Yoshikane Hamono team, now creates knives under his own name, which are gaining recognition among knife enthusiasts around the world. Made of Shirogami #2 steel, these knives feature exceptional blade precision that combines optimal thinness with hardness, providing the user with smoothness and feedback when cutting.

    The Masashi Nashiji Shirogami #2 knife series is based on the centuries-old SAN-MAI technique, where a hard carbon steel core is protected by layers of soft stainless steel, guaranteeing the blades' strength and flexibility. After a specialized heat treatment process, the blades achieve a hardness of 63-64 HRC, confirming their exceptional quality. The appearance of the Nashiji blade is distinguished by its characteristic Japanese design, which adds a unique aesthetic to the knives. The octagonal “WA” style handle, made of light magnolia wood, provides an ergonomic grip and comfort of use for both right- and left-handed users.
