    The Yoshimi Kato Santoku Japanese Knife has a 17 cm blade, ideal for a wide range of kitchen applications. It is perfect for chopping and cutting meat, fruit, and vegetables. Santoku kitchen knives have become an integral part of Japanese cuisine in recent years.

    This beautiful knife was hand-forged by Yoshimi Kato, the son-in-law of Hiroshi Kato, who learned his skills under the guidance of masters such as Kanehiro and Hiroshi—San. In addition to creating knives for Masakage, he also has his own line of knives.

    The blade of this knife is made of state-of-the-art SG2 powder steel, reaching a hardness of 63 on the Rockwell scale. The hard core is surrounded by 32 layers of Damascus stainless steel, with a beautiful dark pattern obtained by etching the blade.

    The handle has a traditional octagonal shape, ensuring a secure grip, even with wet hands. It is made of cherry wood, with an additional part made of Pakka wood.
