The Morihei Hishiboshi Hi 4000 is a #4000 grit sharpening stone designed for the initial polishing stage of kitchen knives.

 

The Hishiboshi Hi series has been designed to replicate the properties of Japanese natural stones (JNAT) – both in terms of the feel of the blade against the stone surface and the way the abrasive slurry is produced. The stone leaves a kasumi finish — a delicate satin contrast between hard steel and soft iron.

The stone's addition of natural material translates to excellent knife control, consistent abrasion, and noticeable yet gentle performance. Despite its fine grit, the stone leaves microscopic "teeth" on the cutting edge, giving the knife practical sharpness — particularly useful for kitchen applications.

The Morihei Hi 4000 does not require soaking; it is a "splash & go" type stone. For best results, moisten the surface beforehand and rub it with a leveling stone or nagura to improve the quality of the abrasive slurry.

Compared to popular brands like Shapton and Naniwa, this model has larger working dimensions (210 × 75 × 25 mm) and a longer lifespan, making it suitable for advanced users and professional chefs.
