    The Hado Junpaku chef's knife with a 210 mm blade is a versatile tool that is perfect for a variety of kitchen tasks. In addition to chopping, it also excels at cutting larger pieces of meat.

    The unique kitchen knives from the Hado Junpaku series are the result of a careful manual production process. Yoshikazu Tanaka is responsible for forging the blades, while Tadataka Maruyama is responsible for finishing and sharpening them. The blades are made of a Shirogami #1 carbon steel core, also known as White #1, surrounded by protective cladding made of high-quality stainless steel. After the hardening, the knives achieve an impressive hardness of up to 63-64 HRC. In addition, both the hardening and the heat treatment of the steel translate into additional benefits, making the knives easy to sharpen and ensuring that they remain sharp for a long time. The knife handle, lacquered and octagonal in shape, is made of oak wood, which further emphasizes the aesthetics of the product.
