The Kanetsugu Pro-M series of kitchen knives are very popular, stainless steel knives from this Japanese manufacturer, in a classic Western style. The blades of these knives are made from a single piece of AUS-8 steel, using the “monosteel” technique. During hardening, the steel undergoes heat treatment (known as “sub-zero treatment”), during which the blades are rapidly cooled to -70°C. As a result, the blades achieve a hardness of 59+/-1 HRC. The blades of the Pro-M series knives have very good cutting properties, which are due to proper heat treatment and, above all, a convex grind, known as “hamaguri ba.” It is worth noting that the finish of the knives in this series and the fit of the handle are of a very high standard.
The handle is made of dark Pakka wood, which has been impregnated and is completely moisture-resistant. The ergonomically contoured handle is comfortable and provides a secure grip, even during long periods of work in the kitchen.
Seki Kanetsugu is a manufacturer from the city of Seki in Japan, famous for the production of kitchen knives. The brand was founded by Matsujiro Kawamura in 1918. He was a descendant of Kanetsugu, a famous samurai sword maker (1336-1392).
