Kanetsugu Pro-M is a series of popular kitchen knives, made entirely of high-carbon stainless steel. The blades of these knives are forged from a single piece of AUS-8 steel using the “monosteel” technique. During heat treatment, AUS-8 steel undergoes a special treatment, known as “sub-zero treatment,” during which the knives are immediately cooled to -70°C, giving the blades a hardness of 59+/-1 HRC. The blades of the Pro-M series knives have exceptional cutting properties, which are due not only to the appropriate heat treatment, but above all, to the convex grind, known as hamaguri ba, which greatly facilitates the separation of food during cutting. It is worth noting that both the finish of the knives in this series and the fit of the handle are of a very high standard.
The handle of this knife is made of dark Pakka wood, which has been impregnated and is completely resistant to moisture. The ergonomically contoured handle is very comfortable and provides a secure grip, even during long periods of work in the kitchen.
The brand was founded in 1918 by Matsujiro Kawamura, a descendant of Kanetsugu, a famous samurai sword maker (1336-1392). Seki Kanetsugu is a manufacturer from the city of Seki, in Japan, which is famous for the production of kitchen knives.
