These knives have a Ginsan steel core, i.e., Silver #3, which is surrounded by stainless steel cladding. Each blade is subjected to hardening, which ensures high hardness, reaching 62-63 HRC. It is this hardening, together with the heat treatment of the steel, that ensures that Hado Ginsan Sakura knives stay sharp for a long time and are extremely easy to sharpen. An additional advantage is the cherry wood handle. It has an octagonal shape and is not only beautiful, but also extremely comfortable.
