The handcrafted Hado Ginsan Kijiro series of kitchen knives is characterized by its beautiful appearance and the highest quality. They are forged by Shogou Yamatsuka, and each knife is finished and sharpened by Tadataka Maruyama. Their characteristic feature is the core made of Ginsan (Silver #3) steel, surrounded by stainless steel cladding. The production process includes a hardening stage, which makes the blades very hard (62-63 HRC). The hardening method used, together with the heat treatment of the steel, makes the knives exceptionally easy to sharpen. In addition, this ensures that the knives remain very sharp for a long time. The beautiful, octagonal handle is made of cherry wood. Its specific Japanese shape makes it extremely comfortable to use. The handle of each knife is coated with a Japanese lacquer called Kijiro.
