The Kanetsugu Pro-M Honesuki 145 mm is a small and handy knife with a very strong blade. It is ideal for trimming poultry and separating meat from bones.

Kanetsugu Pro-M is a series of very well-made and strong kitchen knives made entirely of high-carbon stainless steel. The blades of these knives are forged from a single piece of AUS-8 steel, which has excellent cutting properties. During the hardening of AUS-8 steel, the brand Kanetsugu uses a special heat treatment, known as “sub-zero treatment,” during which the blades are immediately cooled to -70°C. Thanks to this process, the blades achieve a high hardness of 59+/-1 HRC. The finish of the knives, the blade profile, and the fit of the handle are of a very high standard.

The handle of this knife is made of dark Pakka wood, which has been impregnated and is completely moisture resistant. The ergonomically contoured handle is extremely comfortable and provides a secure grip, even during long periods of work in the kitchen.

The brand was founded in 1918 by Matsujiro Kawamura, a descendant of Kanetsugu, the famous samurai sword maker (1336-1392). Seki Kanetsugu is a manufacturer from the Japanese city of Seki, which is famous for the production of kitchen knives.
