    The Hado Ginsan Kijiro knife collection is special because each knife is handmade. Shogou Yamatsuka forges the blades, and Tadataka Maruyama finishes and sharpens them. Each knife has a core made of Ginsan steel (Silver#3) and is surrounded by protective stainless steel cladding. During the heat treatment process, the blades reach a hardness of 62-63 HRC. They stay sharp for a long time because of the process and heat treatment. Sharpening Hado Ginsan Kijiro knives is also easy. The special octagonal handle is made of cherry wood and fits comfortably in the hand. It is coated with a Japanese lacquer called Kijiro, which makes it look beautiful.
