






The Yoshimi Kato Kiritsuke 21 cm V Tsuchime SGStrix is a refined Japanese kitchen knife that blends traditional form with modern performance. The Kiritsuke profile combines the versatility of a chef’s knife with a sharp, angular tip, making it well suited for slicing, portioning, and precise detail work.
Handcrafted in Echizen by Yoshimi Kato, the blade is built around a SGStrix stainless steel core, hardened to approximately 65 ±1 HRC. This high hardness provides excellent edge stability and long-lasting sharpness while maintaining corrosion resistance. The blade is finished with a distinctive V Tsuchime hammer pattern, adding visual character and helping reduce food sticking during use.
A slim blade geometry and double-bevel (50/50) grind ensure smooth cutting performance and precise control. The knife is completed with an octagonal rosewood handle and pakka wood ferrule, offering a comfortable, balanced grip suitable for both right- and left-handed users.
