    The Masakage Koishi Gyuto 24 cm is a versatile chef's knife that is perfect for precision cutting of meat, fish, vegetables, and fruits. Its slim 24.5 cm blade and perfect balance make it an invaluable tool in both professional and home kitchens.

    The core of the knife is made of high-carbon Aogami Super steel, which is known for its exceptional sharpness and durability. This steel achieves a hardness of 63-65 HRC, which allows it to maintain its sharpness for a long time. The San Mai construction means that the core is covered with stainless steel cladding, making the knife easier to maintain while retaining its excellent cutting properties. The Tsuchime hammered finish not only gives it a unique, river stone-inspired look, but also reduces the adhesion of cut ingredients to the blade surface. The Kurouchi finish – a raw, oxidized finish on the upper part of the blade – provides additional protection against corrosion and emphasizes the craftsmanship of the knife.

    Thanks to the use of Aogami Super Steel, the blade of the knife is extremely thin and precise, which makes the Masakage Koishi Gyuto allow for easy and smooth cutting without effort. The slim geometry and distal taper provide excellent control over the knife and allow for precise cutting of even the most delicate ingredients.

    The handle is made of cherry wood, which is characterized by its lightness and warm, natural appearance. The octagonal profile makes the knife fit perfectly in the hand and guarantees a secure grip, even during prolonged use. An additional Pakka wood ferrule reinforces the construction and increases the durability of the handle.
