The Masamoto KK Yanagiba Kitchen Knife with a 300 mm blade is an essential tool for every sushi master. Thanks to its long and narrow blade, it ensures comfort during everyday cutting and slicing. Traditionally, the blade is a single bevel. This knife is used for both sushi and sashimi preparation and originates from the Osaka region in Kansai.

The world-renowned Masamoto Sohonten brand was founded by Minosuke Matsuzawa, who began professional knife production in 1872. He set himself the goal of creating a brand of kitchen knives that would be perfect. Years later, it can be said that he managed to realize this dream. In the global ranking, Masamoto Japanese knives are at the very top, renowned as some of the best. The double-layered blades that characterize the KK Kasumi line are made of Shiro-ko #2 carbon steel, or White Steel No.2, which forms the core. The outer layer is made of soft steel. They are also distinguished by the manual method of forging and finishing, which makes them unique. The heat treatment increases the hardness of the blades to a high degree, of 62-63 HRC. These excellent Japanese knives, made in the traditional style, also retain their sharpness for an exceptionally long time. They are recommended for all sushi masters, as well as lovers of Japanese cuisine and sushi. The knives have a beautiful, D-shaped wooden handle with a buffalo horn ferrule. Magnolia wood is selected for the production of the handles. It should be noted that knives from this series are not stainless, so proper care is essential. Interestingly, the name of the Kasumi line means “mist” or “fog” and is derived from the characteristic finish of the laminated knives, which brings to mind the concept of “mistiness.” Each knife is packed in a nice box, making it a great gift.
