With its wide profile, the Kiritsuke knife is extremely versatile and very popular in Western cuisine. This knife combines the features of Gyuto and Nakiri knives, offering the most valued characteristics of both.

The entire production process of these beautiful knives is done by hand and is carried out by Masashi-san. The master craftsman forges the steel himself, but also polishes and sharpens the knife, and finally attaches the handle.

The Masashi SLD series knives are forged using the SAN-MAI technique. The blade consists of 3 layers and has a very hard core forged from SLD steel. The outer layers are made of soft stainless steel, which protects the core. The SAN-MAI production technique ensures that the blades are flexible and durable. During heat treatment, the knives achieve extremely high hardness (around 60-62 HRC). To give the knives their unique Japanese look, Kurouchi uses unprocessed, black steel to finish the blade. Light-colored Pakka wood is used to make octagonal “WA” style handles. They are comfortable to use for both right-handed and left-handed people.
