    Miyagoshi Ajisai 1200 – Sharpening Stone (#1200)

    Miyagoshi Seito (宮越製陶) is a small manufacturer from Kyoto that has specialized in the production of durable and precise sharpening stones for decades. The Ajisai 1200 model is a medium grit sharpening stone, made using the vitrification process – fired for 36 hours at a temperature of approximately 1300°C. It is characterized by high hardness, stable structure, and very low wear during use.

    The medium grain size of approximately 9.5 microns allows for precise, yet effective, abrasion – ideal for regularly maintaining the sharpness of kitchen knives and work tools. The stone works well with both carbon and stainless steels.

    Application of #1200 grit

    1200 grit is in the upper range of medium stones and works best:

    • for daily sharpening of well-maintained knives,
    • as the last stone in a simplified sharpening system (no need to finish with #3000+),
    • for preparing the blade before finishing on high- grit stones (e.g., #3000, #6000).

    Thanks to its hard structure, Ajisai 1200 ensures precise blade guidance and constant, controlled abrasive aggression.
