The double bevel Nakiri knife is characterized by its Western style, and has a very thin, cleaver-like blade. It is perfect for cutting and chopping vegetables. If you chop often, you will not want to part with this knife.
Masashi-san makes high-quality kitchen knives 100 percent by hand. The process involves forging, steel, grinding, and sharpening, as well as attaching the handle.
The Masashi SLD series features knives with a three-layer blade, made using the SAN-MAI technique. It is very hard and made of SLD steel. The outer layers are made of soft stainless steel. This protects the core. Thanks to the SAN-MAI technique, the blades guarantee high durability and flexibility. During heat treatment, they achieve a very high hardness of 60-62 HRC. The Kurouchi blade finish gives the knives an original, Japanese character. The octagonal handle, in the traditional “WA” style, is made of light magnolia wood. It guarantees comfort for both right-handed and left-handed users.
