Yu Kurosaki Fujin Nakiri 16.5 cm R2 is a precision kitchen knife for vegetables, combining Japanese craftsmanship with modern materials. Nakiri is a classic knife with a straight blade profile, designed for quick and accurate chopping, slicing, and dicing vegetables. Thanks to the flat line of the blade and the high height of the blade, it allows cutting without the need to rock the knife, which translates into even slices and effective work.
The core of the blade is made of SG2 (R2) powder steel, valued for its high hardness (63-64 HRC) and excellent sharpness retention. Thanks to the San Mai construction, the core is surrounded by layers of stainless steel, which increases corrosion resistance and facilitates daily care. The Tsuchime hammered finish, inspired by the Japanese wind god Fujin, not only gives the knife a unique look, but also reduces the sticking of ingredients to the blade.
The knife offers excellent control thanks to its constant blade width (5.2 cm) and gradually tapering blade thickness. The double bevel (50/50) grind and thin geometry ensure cutting precision, regardless of the working technique.
The handle is made of rosewood in a classic Japanese octagonal shape, which guarantees a secure grip and good balance. The materials have been selected with durability and comfort in mind for longer periods of work.
