






The Nigara Hamono SG Strix Gyuto 21 cm Buffalo is a versatile Gyuto kitchen knife, designed for precise and efficient work in the kitchen. This model combines modern materials with traditional Japanese craftsmanship from the Nigara Hamono forge in Hirosaki, Aomori Prefecture.
The blade core is made of SG Strix stainless steel – a high-grade powder steel that combines a hardness of 64–65 HRC with corrosion resistance and ease of sharpening. As a result, the knife stays sharp for a long time, is resistant to minor mechanical damage, and does not require complicated maintenance.
The blade has a Damascus finish with a subtle tsuchime (hammered) pattern, which improves its performance – among other things, it reduces the sticking of products during cutting. The double bevel grind (50/50) and thin geometry ensure smooth cutting and precise work for both right- and left-handed users.
The Wa-style handle is made of walnut wood and finished with a buffalo horn ferrule. The octagonal shape fits comfortably in the hand and allows for a secure grip. The knife is well balanced, which makes it comfortable to use for long periods of time.
