Kanetsugu Miyabi Issin is a series of kitchen knives with a three-layer construction, made using the “SAN-MAI” technique, popular in Japan. The use of this technique means that the core of the knife is made of hard, high-carbon “AUS-8” steel, which is coated with soft and completely stainless SUS-410 steel. Thanks to this technique, the hard AUS-8 core is protected by outer layers of soft SUS-410 steel, which also provides additional flexibility.
During the heat treatment (hardening) process, the knives achieve a hardness of 57-58 HRC, which means they retain their sharpness and are easy to sharpen.
The handle is made of natural rosewood and reinforced with two rivets. The wood has been properly impregnated, making it resistant to moisture and temperature.
