The Kanetsugu Pro-M series kitchen knives are classic Japanese knives in Western style. The blades are forged from a single piece of AUS-8 stainless steel, using the “monosteel” technique. During hardening, the knives undergo a special heat treatment (known as “sub-zero treatment”), during which the blades are cooled drastically to -70°C, giving them a hardness of 59+/-1 HRC. What sets these knives apart is their incredible cutting properties, which are due to proper heat treatment and a convex grind, known as “hamaguri ba.” The finish of the knife and the fit of the handle are unmatched among other knives in this price range.
The handle is made of dark Pakka wood, which has been properly impregnated and is completely moisture-resistant. The specially contoured handle is very comfortable, ensuring a secure grip when working in the kitchen.
