








The small and handy Kanetsugu Saiun utility knife, with a blade length of 120 mm, is useful for working with small food items such as shallots, garlic, and small fish.
Kanetsugu Saiun are beautiful and functional kitchen knives with eye-catching blades made of 33-layer Damascus steel. The core of these knives is forged from VG-10 stainless steel and hardened to 61+/-1 HRC, ensuring long-lasting sharpness. During heat treatment, the knives undergo a “sub-zero treatment” process, which involves cooling the blade at a temperature of -70°C. The drastic cooling of the knife makes the blade harder and keeps it sharp for longer. The outer layers of the knife are made of 65-layer Damascus steel, polished to a high polish. In addition, the Damascus steel that encases the hard VG-10 steel core protects it and gives the whole knife greater flexibility.
The striking and very comfortable handle is made of Spanish Micarta, which is completely resistant to moisture and temperature changes, making it ideal for the kitchen. The handle is reinforced with two rivets. An aesthetic red spacer gives the handle an elegant look.
The Seki Kanetsugu factory was founded in 1918 by Matsujiro Kawamura, a descendant of Kanetsugu, who first began forging samurai swords in 1345.
