The Kanetsugu Saiun, with a blade length of 90 mm, is a smaller utility knife that is particularly suitable for more precise tasks in the kitchen and for peeling vegetables and fruit.
The Kanetsugu Saiun series of kitchen knives are beautiful and functional knives with very impressive blades made of 33-layer Damascus steel. The core of these knives is made of high-carbon VG-10 stainless steel and has been hardened to 61+/-1 HRC, which ensures very long-lasting sharpness. During production, the knives undergo a special “sub-zero treatment” process, which involves rapidly cooling the blade to -70°C. The drastic change in temperature makes the blade harder and keeps it sharp for longer.
The outer layers of the blade are made of beautiful 65-layer Damascus steel, polished to a high polish. In addition, the Damascus steel surrounding the hard VG-10 steel core protects it and gives the whole knife greater flexibility.
The elegant and ergonomic handle is made of Spanish micarta, which is completely resistant to moisture and temperature changes — perfect for the kitchen. The handle is reinforced with two rivets and embellished with an elegant red spacer.
The Seki Kanetsugu factory was founded over a century ago by Matsujiro Kawamura, a descendant of Kanetsugu, who first began forging samurai swords in 1345.
