The Sakai Kikumori Gokujyo Sujihiki has a 240 mm blade and is primarily designed for slicing. It is a beautiful, very slender kitchen knife that can be used to prepare sushi or portion meat and steaks, for example.

The Sakai Kikumori Gokujyo line of kitchen knives is used professionally, and its qualities are appreciated by the most demanding chefs. The knives in this collection are hand-forged and finished by skilled craftsmen working with Sakai Kikumori. The Warikomi steel lamination technique, used together with subsequent stages of production, makes these knives very hard and extremely easy to sharpen. They have a strong core made of carbon steel called Yasuki White – 2 (Hagane), which is covered with soft iron (Jigane) cladding. During the hardening, the blades achieve a high hardness level of 62-63 HRC. The Sakai Kikumori Gokujyo Series kitchen knives have an octagonal handle (WA) with a buffalo horn ferrule finish for comfortable use.

By using hardening and steel heat treatment, the manufacturer obtains durable knives with excellent parameters, which are a pure joy to use and even sharpen. Looking at the practical and extremely beautiful Sakai Kikumori Gokujyo knives, you can see the highest craftsmanship combined with precision workmanship.
