






Anryu Santoku 18 cm Kurouchi Tsuchime Aogami Super is a hand-forged kitchen knife from the heart of Japanese craftsmanship – the Anryu Hamono workshop in Echizen, currently run by Takumi Ikeda, the fourth-generation heir to Master Katsushige Anryu. This model combines classic processing techniques with modern functionality, offering high cutting precision and blade durability.
The core of the knife is made of Aogami Super (Blue Super Steel) – one of the hardest and most valued carbon steels in Japan, reaching a hardness of 63–64 HRC. The core is clad in stainless steel (san-mai), which facilitates maintenance while maintaining the cutting properties of carbon steel. The blade has been finished in the kurouchi style, with additional tsuchime hammer marks, which not only give it a distinctive look, but also reduce the adhesion of food to the blade surface. The kasumi polish further emphasizes the boundary between the layers of steel.
The geometry of the blade has been refined for performance: a thin cross-section behind the cutting edge, visible distal taper, and double bevel grinding (50/50) ensure smoothness and control during use. The (octagonal) handle, type Rosewood, guarantees a secure grip and good balance.
