    A knife for most kitchen tasks, the Kanetsugu Miyabi Issin Santoku, with a blade length of 170 mm, is the Japanese equivalent of a chef's knife.

    Knives from the Kanetsugu Miyabi Issin series are made of high-carbon stainless steel in a three-layer construction, known as SAN-MAI. This method means that the core of the knife is forged from hard, high-carbon “AUS-8” steel, which is then coated with soft SUS-410 steel. As a result, the hard AUS-8 core is protected by outer layers of soft SUS-410 steel, which also provides additional flexibility.

    During the heat treatment process, Miyabi Issin knives achieve a hardness of 57-58 HRC, which allows them to retain their sharpness for a long time and makes them easy to resharpen.

    The handle is made of natural brown rosewood and reinforced with two rivets. The wood used to make the handle has been properly impregnated and is resistant to moisture and temperature. Miyabi Issin knives are recommended for both professionals and enthusiasts who are just beginning their adventure with Japanese knives.

    Seki Kanetsugu is one of the oldest manufacturers of kitchen knives in the city of Seki, Japan. The brand was founded over 100 years ago by Matsujiro Kawamura, a descendant of Kanetsugu, the famous samurai sword maker (1336-1392).
