





The Gyuto, Kanetsugu Pro-J, with a length of 230 mm, is the Japanese equivalent of a universal chef's knife, which is indispensable in every professional and home kitchen. Made of innovative ZA-18 steel from the renowned Japanese steel mill, Aichi Steel Corporation, it surpasses the popular VG-10 steel thanks to its higher carbon content, which translates into greater hardness and durability of the blade. The increased amount of chromium (18%) not only strengthens the steel, but also provides better corrosion resistance, while molybdenum and cobalt further improve the properties of the steel, making it more resistant to chipping and retaining its sharpness for longer.
The Gyuto Kanetsugu Pro-J blade, forged using the three-layer SAN-MAI technique, combines a hard steel core with soft stainless layers, providing the perfect combination of flexibility and strength. A unique heat treatment for steel achieves a hardness of approximately 61 HRC, and an additional “sub-zero treatment” at a temperature of approximately -70°C enhances cutting aggression and maintains long-lasting sharpness.
These knives feature a distinctive Tsuchime hammered finish, which is not only beautiful, but also practical, reducing food sticking to the blade. In addition, the Hamaguri-ba blade profile, inspired by traditional Japanese techniques, guarantees precise cutting and easy separation of ingredients from the blade.
The knife's handle, made of layered, glued black wood and reinforced with two rivets, ensures durability and comfort of use.
