The Kanetsugu Pro-M Knife, with an impressive 270 mm blade, is the epitome of versatility in the kitchen, excelling at both delicate tasks such as filleting fish and everyday tasks requiring precision, such as chopping vegetables. This series of knives is distinguished by its exceptional quality, with blades forged from a monolithic block of AUS-8 molybdenum–vanadium stainless steel, which ensures their durability and reliability.

Kanetsugu uses an innovative “sub-zero” heat treatment method, cooling the blade to an extremely low -70°C, resulting in extraordinary hardness of 59+/-1 HRC. A special grinding technique known as “Hamaguri Ba” further increases cutting efficiency and makes it easier to separate the cut ingredients. The perfect finish of the blade and the precise fit of the handle are testament to the highest quality craftsmanship.

The handle, made of dark, impregnated Pakka wood, guarantees moisture resistance and a secure and stable grip, which is invaluable during long hours of work in the kitchen. The ergonomic shape of the handle makes the knife not only a reliable tool, but also pleasant to use.

The brand's history dates back to 1918, when Matsujiro Kawamura, a descendant of the Kanetsugu family, famous samurai sword smiths from 1336-1392, founded a factory in Seki, a city known as the world center for high-quality knives. Kanetsugu Pro-M knives not only reflect a rich blacksmithing tradition, but are also synonymous with functionality and style in the modern kitchen.
