The long and slender blade of the Kanetsugu Miyabi Issin Sujihiki 210 mm Knife is the perfect tool for slicing thin pieces of meat, filleting fish, or preparing sushi.
Knives from the Kanetsugu Miyabi Issin series are made of high-carbon stainless steel in a SAN-MAI (three-layer) construction. Forging using the SAN-MAI technique means that the core of the knife is made of hard, high-carbon steel (AUS-8), which is covered with soft steel (SUS-410). Thanks to this method, the hard core (AUS-8) is protected by outer layers of soft steel (SUS-410), which also provide additional flexibility.
During the heat treatment process, Miyabi Issin knives achieve a hardness of 57-58 HRC, which allows them to retain their sharpness for a long time and makes them easy to resharpen.
The handle is made of natural brown rosewood and reinforced with two rivets. The wood used to make the handle has been properly impregnated and is resistant to moisture and temperature. The Miyabi Issin series knives offer excellent value for money. They are the perfect choice for both professionals and cooking enthusiasts who are just starting their adventure with Japanese knives.
