





The Tsunehisa Nami Sujihiki Kitchen Knife, with its narrow and long 240 mm blade, is a tool designed specifically for precision cutting of thin slices of meat and fish. However, its versatility also allows it to be used in a variety of culinary tasks, where the highest precision is required.
These unique kitchen knives from the Nami series are made in the Tosa region of Japan, where experienced blacksmiths handcraft their perfect blades. The blades are made of durable AUS-10 stainless steel, known for its durability and ability to maintain sharpness. Around the core of the blade are 33 layers of unique Damascus steel, creating a beautiful pattern reminiscent of ocean waves—hence the name of the Nami Collection, which means “wave” in Japanese. The heat treatment gives the blades a hardness of 61 +/- 1 HRC, and the high-polish finish adds elegance. The classic, octagonal, Japanese-style handle is made from a single piece of Japanese oak, emphasizing their authentic character.
