2000 grit is the start of the finishing range, recommended for:
- obtaining a smooth, uniform cutting edge,
- removing micro-burrs created by sharpening with 400–1000 grit,
- improving sharpness and preparing the blade for polishing at higher grits (e.g., #3000+).
With its balance of abrasiveness and precision, Sakura 2000 works well as both the final stone in daily knife care and as a transitional step in more complex sharpening systems.
