The 270 mm Kanetsugu Hybrid Wa Bocho Yanagiba kitchen knife is an indispensable tool for every sushi enthusiast. Its distinctive feature is a narrow and long blade, traditionally single bevel, which makes it perfect for precise cutting and slicing. This knife is designed primarily for preparing sushi and sashimi.

The design of these unique, new Kanetsugu Hybrid Wa Bocho knives was based on two main principles: style and practicality. Each blade is forged from durable High Carbon Molybdenum Vanadium Stainless Steel, with a hardness of HRC 57-59. Their stylish, octagonal handles are made of modern materials, ensuring a secure and comfortable grip.

Yanagiba knives are mainly used for cutting fish fillets for sashimi and sushi, but they are also perfect for filleting small and medium-sized fish and removing skin. The narrow blade and relatively sharp angle of the Yanagiba blade are features that significantly reduce the effort required when cutting ingredients. The long blade allows you to cut through fish in one smooth motion.

Thanks to the right cutting technique, the special blade profile, and sharp edges, Yanagiba knives allow you to prepare fish meat perfectly. This is especially important in dishes where fish is eaten raw, as it helps to preserve its original flavor and texture.
