The Yoshimi Kato Damascus SG2 Chef's Knife, with a length of 210 mm, is a versatile tool, perfect for a variety of culinary tasks. It is excellent not only for chopping, but also for cutting larger pieces of meat.
This unique knife was hand-forged by Yoshimi Kato, Hiroshi Kato's son-in-law, who honed his skills under the guidance of masters such as Kanehiro and Hiroshi-San. In addition to creating knives for Masakage, he also has his own line of knives.
The blade is made of modern SG2 powder steel, reaching a hardness of 63 HRC on the Rockwell scale. The hard core is surrounded by 32 layers of Damascus stainless steel, creating a striking, dark pattern obtained through the etching process.
The traditional octagonal handle provides a secure grip, even with wet hands. It is made of cherry wood, complemented by an element of Pakka wood.
Lovers of Japanese craftsmanship will certainly appreciate Yoshimi Kato knives, which combine excellent aesthetics with exceptional functional properties.
